So, today Ry's work hosted a big bake sale to support the Special Olympics. I thought 'YAY! An excuse to do some yummy Christmas baking!" & Ry had already asked me to make a large amount of peanut-butter balls. But I wanted to make something that would be sooo yummy, so... I looked up yummy desserts & found a fruit & yogurt muffin recipe. When I pitched the idea to Ry he said "I HATE that yogurt muffin stuff it tastes like a popcorn fart" but I went ahead anyway because I had left-over fruit salad.
I am pretty sure he has eaten 10 since last night, they are his new favorite muffins!!
-- So I thought I would share this recipe:
Fruit & Yogurt Muffins
2 cups of all-purpose flour
1 cup of white sugar
1 tsp baking soda
1tsp baking powder
1 container of yogurt
1 egg
1 tsp vanilla
4 tbsp butter
2 cups of fruit (I used whole grapes, pineapple, apple pieces & tengerine slices... the chunky fruit seemed to work)
-- I doubled the recipe for the sale, good thing I did, my husband has turned into the muffin man!!!

Isn't it wonderful to find a recipe that your husband loves. I enjoy baking treats that I know Mark loves.
Jenna....I definitely was addicted after eating about a jillion of them at your house. I made some tonight, because I got tired of doing homework...and the only fruit and yogurt I had in my house was an apple and mango-peach yogurt, and it doesn't taste that bad either! I'm going to experiment this week....I'm going to make them with strawberry yogurt and use banana chunks! (I know so over combined! ha ha) I will have to make them tomorrow and bring them with me on Tuesday to share with you between classes!
